Nigel Barden served up a tasty baked bacon joint with Cumberland sauce on Radio 2 Drivetime with Simon Mayo Foodie Thursday.
The ingredients for the bacon are: 2kg long-back pork, 200g curing salt, 85g demerara sugar and 2 tsp pepper.
For the Cumberland Sauce: 1 orange, 1 lemon, 5 tbsp redcurrant jelly, 5 tbsp port, 1 tsp mustard powder and 1 tsp ground ginger.
