Si and Dave make sweet pierogi on The Hairy Bikers’ Northern Exposure.
The Bikers says: “These sweet pierogi topped with crystallised mint make for an impressive dessert. You could try adding strawberries and raspberries to this recipe or using any summer berries you fancy.”
The ingredients for the crystallised mint leaves are: handful of large mint leaves, picked from their stems and 1 free-range egg white and 100g caster sugar.
For the dough: 250g plain flour, 15g icing sugar, pinch salt, 1 lemon, zest only, 1 free-range egg, 2 tbsp sour cream and knob of butter.
For the filling: 200g fresh blueberries and 2 tbsp caster sugar, plus a little extra for cooking.
To serve: 100ml sour cream or crème fraiche and 1 tbsp icing sugar, plus more for sprinkling.
