Lorraine Pascale is saving the roast dinner with her quick and tasty roast chicken with forty cloves of garlic, rosemary, thyme and stovetop quick roast carrots in 30 minutes on This Morning.
The ingredients are: 12 chicken pieces on the bone, drumsticks, thighs or halved breasts, skin removed, 2 red onions, quartered, 40 garlic cloves, peeled and bashed,1 tbsp olive oil, leaves from 3 sprigs fresh rosemary, finely chopped, leaves from 4 sprigs of fresh thyme, finely chopped, 250ml of a good liquid chicken stock, handful flat leaf parsley leaves and sea salt and freshly ground black pepper.
For the stovetop quick roast carrots: good drizzle of olive oil, Handful of chopped fresh rosemary, 750g baby carrots or regular carrots, cut into 6-7cm long and thumb thickness pieces, 30g butter, handful fresh thyme leaves, salt and freshly ground pepper and Green vegetables and boiled new potatoes to serve.
