Simon Rimmer serves up a delicious lemon and pistachio cake on Sunday Brunch.
The ingredients are: 3 eggs, 150g Caster Sugar, 1 tsp vanilla extract, Juice and zest 2 lemons, 150g milk, 1 tbsp butter, 300g flour, 1.5 tsp baking powder, 150g crushed pistachios and 50ml limoncello.
For the frosting: 225g sugar, 125g butter, 1 vanilla pod, 1 tbs whipping cream and Pistachios and lemon zest to garnish.
