Ariana Bundy served up a tasty Iranian Caspian style seared fillet of beef with pomegranates and walnuts on Sunday Brunch.
The ingredients are: 1.5kg fillet of beef.
For the marinade: 1 large onion, finely grated, 125ml 1/2 cup fresh or store bought (unsweetened) pomegranate juice, 75ml 1⁄3 cup pomegranate paste, 3–4 garlic cloves, 75g 1 cup walnuts, finely ground, 2 tbsp olive oil, 1/2 teaspoon turmeric and Salt and pepper.
For the Mast O Khiar: 1 large cucumber, Semi peeled, seeded and diced or 6 small cucumbers, diced, 400g 11⁄2 cups low-fat Greek yogurt or crème fraîche, 200g 3⁄4 cup full-fat natural yogurt, 200g 3⁄4 cup soured cream, 50g 1⁄2 cup raisins, 4 tbsp roasted walnuts, chopped, 1 tbsp chopped fresh mint 1⁄2 tsp dried mint, 3 tarragon sprigs, finely chopped, 2 spring onions, finely chopped, 1 tsp sea salt, Fresh pepper, to taste, 1 tsp dried rose petals, to decorate (optional).
