Simon Rimmer make a delicious stout cake with peanut butter frosting on Sunday Brunch.
The ingredients are: 125g butter, 275g soft dark brown sugar, 2 eggs, 175g flour, 1 tsp bicarbonate soda, Half tsp baking powder, 200ml Guinness or similar stout, 75g cocoa powder and 100g chocolate pistoles.
For the frosting: 350g cream cheese, 150g smooth peanut butter, 900g icing sugar, 1 tsp vanilla, 225g butter and Cocoa powder, pouring cream and fruit to garnish.
