For the Sponge Layer: 200g Madeira cake, 30ml champagne (though cava or prosecco would be as good) and 30ml elderflower cordial.
For the Fruit layer: 50g seedless strawberry jam, 30ml champagne and 175g strawberries.
for the topping: 100ml double cream, 200ml full fat Greek yoghurt, 3 shop bought meringue nests and Small scattering of flaked almonds, to serve.
