Mary Berry easy lemon meringue pie recipe on Mary Berry’s Absolute Favourites

Mary Berry served up a cheats lemon meringue pie on Mary Berry’s Absolute Favourites.

Mary says: “This is the perfect desert for a family gathering; simple to make but guaranteed to have them coming back for seconds.”

The ingredients for the pastry are: 225g plain flour, 175g butter, 45g icing sugar and 1 large free-range egg, beaten.

For the lemon filling: 6 lemons, zest and juice, 65g cornflour, 250g caster sugar and 6 free-range egg yolks.

For the meringue topping: 4 free-range egg whites, 225g caster sugar and 2 tsp cornflour.
