Gino D’Acampo visits Naples and served up chicken in breadcrumbs topped with fresh mozzarella and served with pizza-style sauce based on his mother’s recipe on Gino’s Italian Escape.
The ingredients are: 6 tbsp Italian olive oil, 2 chicken breast fillets, skinless, 2 clove garlic, finely chopped, 600 g canned chopped tomatoes, pinch of dried oregano, salt, and freshly ground pepper, 1 ball mozzarella, drained and finely sliced and 6 slices of ciabatta bread, toasted.
For the sauce: 2 tsp olive oil, plus extra for drizzling, 2 garlic cloves, peeled and sliced, 2 * 400g tins chopped tomatoes and 2 teaspoons oregano.
