Nigel Barden served up stuffed peppers with pork, smoked paprika and thyme on Radio 2 Drivetime.
The ingredients are: 6 tbsp extra virgin olive oil, 1 onion, finely diced, 1 fennel bulb, trimmed and diced, 400g minced pork, 2 garlic cloves, crushed, 6-8 sprigs of thyme, leaves stripped from branches, 1 tsp fennel seeds, crushed, 1 tsp sweet smoked paprika, 1 x 400g tin plum tomatoes, A glass of white wine or sherry (optional), 3 large red peppers, halved and cored, A large handful of breadcrumbs, A good pinch of chilli flakes and 30-40g Parmesan cheese, for grating.
