Ainsley Harriott served up a tasty vegetarian butternut squash curry on Ainsley Harriott’s Street Food in Barbados.
Ainsley recipe is inspired by the a Barbadian street food known as the roti that is normally made with chicken or lamb.
The ingredients for the vegetable curry that Ainsley used as the filling for his veggie roti are: butternut squash, onions, salt, freshly ground curry spice, garlic, chilli, basil, lime juice, water and coconut milk.
