Bill Granger served up baked salmon with courgette fritters that is a healthier twist on a potato cake or fritter to start the week on Lorraine.
The ingredients for the courgette fritters: 500g courgettes, grated, ½tsp sea salt, 8 spring onions, chopped, 125g feta cheese, crumbled, 35g chopped fresh flat leaf parsley, 15g chopped fresh mint, 2 eggs, lightly beaten, 60g plain flour, Salt and freshly ground black pepper and 60ml olive oil, for shallow frying.
For the baked salmon: 1 tbs extra virgin olive oil, 1 tsp sea salt and 4 x 180g salmon fillets, with skin.
for the cucumber and yoghurt salad: 1 cucumber, 250ml thick Greek yoghurt, 2 tablespoons chopped flat leaf parsley, 1 tablespoon lemon juice, Sea salt and freshly ground black pepper and Lime wedges.
