Nadia Sawalha serves up a delicious chicken ole with dry sherry on Lorraine.
Ingredients: 2 tbsp olive oil, 8 chicken thighs, skin on (either on or off the bone), Salt and pepper, 1 large red onion, diced, 1 green pepper, de-seeded and chopped into 2cm pieces, 5 garlic cloves finely chopped, 1 heaped tbsp smoked paprika, 1 heaped tbsp tomato puree, 100ml dry sherry, 400g tin cherry tomatoes, 400g tin chickpeas, drained & rinsed, and 100g of green pitted olives.
