James Martin cooks smoked salmon and chive waffles with black pudding, poached eggs and hollandaise sauce on Saturday Kitchen.
James says: “If you feel like pushing the boat out for brunch then this is the recipe for you. Smoked salmon waffles, topped with crisp black pudding, a soft poached egg and buttery homemade hollandaise sauce, what more could you want?”
The ingredients for the waffles: 260g plain flour, 1 tbsp baking powder, 1 tsp sea salt flakes, 1 tbsp granulated sugar, 3 large free-range eggs, lightly beaten, 425ml whole milk, 110g unsalted butter, melted, 150g smoked salmon, torn into small pieces and 2 tbsp fresh chives, finely chopped.
For the black pudding and poached egg: 200g black pudding, sliced, splash white wine vinegar and 4 medium free-range eggs.
For the hollandaise sauce: 2 egg yolks, 1 lemon, juice only, 110g clarified butter, warmed, pinch cayenne pepper and pinch salt.
To serve: 25g baby spinach and 25g fresh watercress.
