Simon Rimmer serves up a delicious lentil bolognese vegetarian one pot dish on Sunday Brunch.
The ingredients are: 1 onion, finely chopped, 2 carrots, 4 sticks celery, 1 tsp garlic, 1 tbs oregano, 1 tbs marjoram, 3 sprigs fresh rosemary, chopped, 125g tomato paste, 350ml bottle red wine, 150ml vegetable stock, 200g cooked puy lentils, 200g mushroom, sliced, 50g butter to fry, 1 clove garlic, 250g cooked penne and 200g grated mozzarella.
