Simon Rimmer cooks a tasty pork with smoked chilli and black bean stew dish for Mother’s Day on Sunday Brunch.
The ingredients are: 100ml extra virgin olive oil, 1.5kg large cubed pork shoulder, 2 onions, chopped, 4 cloves of garlic, 1 ancho chilli, chopped, 2 tbs smoked paprika, 2 tbs cumin, 500ml tomato passata, 300ml chicken stock, 75ml cider vinegar, 50g soft light brown sugar and 600g cooked, drained black beans.
For the guacamole: 3 avocados, 3 plum tomatoes, 1/4 red onion, One stem full bunch of coriander, 1 chillies, Juice 3 limes and Salt and pepper.
