John Whaite serves up Chinese style pulled pork for a Mother’s Day treat on Lorraine.
The ingredients are: 1 kg pork shoulder, Salt for crackling, Oil for searing, 2 fennel bulbs roughly chopped, 2 leeks roughly chopped, 2 star anise, 2 cloves garlic peeled and crushed, 100ml shaoxing rice wine or dry sherry, 2 tbsp light soy sauce, 2 tsp fish sauce, 2 dried red chillies, A pinch of black pepper, 500 ml chicken stock and 1 medium Bramley apple peeled, cored and in 1 inch cubes.
