Nigel Barden Chocolate with Pear and Ginger Crumble recipe on Radio 2 Drivetime

Nigel Barden serves up a delicious chocolate with pear and ginger crumble dessert on Radio 2 Drivetime with Simon Mayo.

Nigel says: “This is a really warming winter dessert that is perfect for chocolate lovers. ”

The ingredients are:

For the red wine ganache: 125g 70% dark chocolate, finely chopped and 90ml red wine.

Pear filling: 6 pears, peeled, cored and chopped into medium sized chunks, 75ml red wine, 2 tbsp ruby port, 75g clear/runny honey, 1 star anise, 1 cinnamon stick and 150g blackberries or blackcurrants.

For the crumble: 110g blanched hazelnuts, 75g plain / all-purpose flour, 1 tbsp cocoa powder, 50g soft light brown sugar, 5 tbsp unsalted butter, chilled and diced, 1 tsp ground cinnamon, 1 tsp ground ginger, 1 tsp mixed spice and a pinch of salt.
