Gino D’Acampo served up 20 Minute Dinner baked of cod and red pesto parcel on This Morning.
The ingredients are:
For the Courgette salad with walnuts and balsamic glaze: 4 medium size courgettes, 80ml extra virgin olive oil, 2 garlic cloves, finely chopped, 70g walnut halves, Salt and black pepper to taste, 60g rocket leaves, 4 tablespoons of balsamic glaze.
For the Fillet of cod with a spicy red pesto: 1 x 400 tinned chopped tomatoes, 1 tablespoon of extra virgin olive oil, 1 clove of garlic (peeled), 180g sun dried tomatoes in oil (drained), 1 medium hot red chilli (deseeded), Salt to taste, 4 fillets of cod (skinless and approx 180g each), 2 tablespoons of freshly chopped flat leaves parsley.
