Mrs Singh serves up her delicious samosas with mint sauce dish on Mel and Sue.
The ingredients for the pastry: 450g flour, 100ml water, 1tsp of cooking oil, ½tsp lemon juice, ¼tsp salt, ½tsp cumin seed, a little bowl of flour and a little bowl of water.
For the filling: 2 large Potatoes, peeled and diced small, 200g peas, 2 carrots, finely chopped, 1 onions, finely chopped, salt, 2cm ginger, grated, ½tsp garam masala, ½tsp pomegranate powder and 2 green chillies.
For the mint sauce: Handful of mint leaves, 2 onions, ½ cooking apple, cored but not peeled, 15g sugar, 1tsp salt, 2 green chillies and 50ml water.
