Carol Adams serves up a tasty Louisiana gumbo with okar, shrimp, sausage and chicken on Mel and Sue.
The ingredients are: 1/2 cup plain flour, 1/2 cup vegetable oil, ½ cup diced onion, ½ cup minced green pepper, ½ cup minced celery, 3 garlic cloves, minced, 1 cup of sliced okra, 32 ounces chicken broth, 1 cup canned diced tomatoes with juice, 3 bay leaves, 1 tablespoon Cajun seasoning, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 1/2 cups cooked smoked sausage, sliced diagonally, 2 lbs raw large prawn, cleaned and deveined, 1 tbsp of butter, 1 tsp of Marmite and Tabasco.
For the Cajun spice mix: 2 ½ tablespoons paprika, 2 tablespoons of salt, 2 tablespoons garlic powder, 1 tablespoon ground black pepper, 1 tablespoon onion powder, 1 tablespoon cayenne pepper, 1 tablespoon dried oregano, 1 tablespoon dried thyme and ½ tablespoon ground bay leaf.
