Toomtoom lentils with injera flat bread Ethiopian vegetarian dish on Mel and Sue.
The ingredients are: 325g red split lentils, 1tsp fresh ginger, finely chopped, 4-6 cloves garlic, finely chopped, 1tsp ground coriander, 1tsp ground Turmeric, 1tsp ground Fenugreek powder, 1tsp ground Dried oregano, 1tsp ground Cumin seeds, 2 x carrots, finely chopped, 2 x large red onion, finely chopped, 2 x small courgettes, finely chopped, 2 x fresh tomatoes, chopped small and 2tbsp fresh coriander.
For the injera: 80g self-raising flour, 100g teff flour (if not you can also just use 100% teff or 100% self raising flour), 450ml lukewarm water and Vegetable oil, for the pan.
