James Martin makes blueberry galette served with home-made ice cream on series 2 of James Martin: Home Comforts.
A galette is a term used in French cuisine to designate various types of flat round or free form crusty cakes.
James blueberry galette is one of his holiday favourites and the master chef says: “To get the perfect pastry, you really need to make it by hand.”
The ingredients are: 200g plain flour, plus extra for dusting, 150g unsalted butter, chopped, 75g caster sugar, 2 free-range egg yolks, 400g fresh blueberries, 1 vanilla pod, split in half lengthways, seeds scraped out, 2 tbsp cornflour, 1 lemon, juice only and 2 tbsp demerara sugar.
