Brian Turner tomato soup with roast squash and chestnuts recipe on Christmas Kitchen with James Martin

Brian Turner serves up tomato soup with roast squash, chestnuts bacon, and croûtons on Christmas Kitchen with James Martin.

Brian says: “This filling winter soup is pepped up with a few Christmas leftovers, including bacon, Brie and chestnuts.”

The ingredients for the soup are: 1 butternut squash, cut into wedges, seeds removed, 8 tomatoes, skins removed, de-seeded, cut in half, 4 garlic cloves, roughly chopped, small sprig fresh thyme, 3 tbsp rapeseed oil, 1 litre chicken stock, 4 rashers bacon, diced, 8 pre-cooked chestnuts, salt and freshly ground black pepper and 2 tbsp chopped fresh parsley, to garnish.

For the Brie and mustard croûtons: 2 small baguettes, cut in half lengthways, 175g Brie, diced and 1 tsp Dijon mustard.
