Tom Kerridge serves up proper baked beans served on soda bread for a great family staple on Tom Kerridge’s Proper Pub Food.
Tom says: “Beans on toast is a British staple, but you can very easily make it something special. Don’t be put off by the long cooking time – it’s just a few minutes of effort and the rest of the time it takes care of itself.”
The ingredients are: 400g dried white beans (such as haricot blanc), soaked overnight in cold water, 75ml rapeseed oil, 200g smoked streaky bacon, chopped, 200g onion, finely chopped, 2 garlic cloves, grated, 2 x 400g chopped tinned tomatoes, 2 tbsp tomato purée, 150g soft dark brown sugar, 200ml red wine vinegar and salt and freshly ground black pepper.
