Tom Kerridge serves up a delicious gin and tonic granita dessert for a celebration meal on Tom Kerridge’s Proper Pub Food.
Tom says: “This light, and slightly boozy dessert is the perfect way to finish a heavy meal. The apple caramel adds a sweetness to an otherwise sharp, refreshing dish.”
The ingredients are: 220g caster sugar, 170ml good quality gin, 500ml tonic, 1 lemon, juice only, 2 Bramley apples, peeled and grated, 500ml apple juice, 50g butter and 2 Braeburn apples, diced.
