Tom Kerridge makes a maple cake baked on the barbecue as part of his outdoor food theme on Tom Kerridge’s Proper Pub Food.
He believes that outdoor cooking should be given the same love and attention as cooking in the kitchen and his BBQ maple cake is a fine example of what is possible.
The ingredients for Tom’s cake are: 200g soft unsalted butter, 30g smoked butter, 300g demerara sugar, 400g self raising flour, 4 free range eggs and maple syrup.
