Gino D’Acampo serves up a special wild mushroom and white truffle risotto for Philip Schofield’s Text Santa on This Morning.
The ingredients are: 350g Arborio, 5 tablespoons of olive oil, 1 onion, peeled and finely chopped, 300g fresh Porcini mushrooms, sliced, 300g mix of wild fresh mushrooms, roughly sliced, 100ml dry white wine, 1 tablespoon fresh thyme leaves, 1.2 litres warm vegetable stock, made with 2 stock cubes, 50g salted butter, 50g freshly grated Parmesan cheese, a small fresh white truffle, extra virgin olive oil for drizzling and salt and black pepper.
