Simon Rimmer serves up tasty crab cakes flavoured with lime and served with fresh tomato and coriander salsa for a tasty dish on Daily Brunch with Ocado.
The ingredients for the crab cakes are: 500g white crab meat,1½ finely diced red onion, 2 celery sticks, finely diced, ½ red pepper, finely diced, ½ green pepper, finely diced, 375g breadcrumbs, 4 limes, 3 egg, 1 egg for the crab mix, and 2 eggs beaten to dredge the patties, 40g mayonnaise, 100g plain flour, 3 avocados, ripe, 100g crème fraiche, 6 tomatoes, chopped, 1 handful coriander, 3 lime , juice only for the Pico de gallo garnish and 1 birds eye chilli, finely chopped.
