Simon Rimmer makes a delicious coffee and walnut cake with butter cream and bananas on Daily Brunch.
Simon says: “This is not s dessert, it is a cake to have a cup of tea with.”
The ingredients for the cake are: 225g nsalted butter, plus extra for greasing, 225g caster sugar, 4 free-range eggs, 50ml strong espresso coffee, 225g self-raising flour and 75g walnuts.
For the buttercream topping: 125g unsalted butter, 200g icing sugar, 50ml strong espresso coffee and 12 walnut halves, to decorate.
