James Martin showcase his vegetarian crispy aubergine (egg plant) and mozzarella with tomato sauce on Saturday Kitchen.

The dish is food hell for singer Donny Osmond, but James says:

“This is a quick vegetarian dish, perfect for a midweek supper. To make the tomato sauce extra special use San Marzano tomatoes.”
