Gino D’Acampo serves up fried pasta half moons, filled with soft ricotta cheese, crunchy hazelnuts, orange zest and sweet chocolate chips in Bologna on Gino’s Italian Escape: A Taste Of The Sun.
His inspiration for the dish came after investigating the region’s local pasta shape – tortellini. He visits a speciality shop in the city centre and encounters two charming sisters, who teach Gino how to stuff the tiny ‘belly button’ shapes. Naturally, Gino could not leave these pasta experts without tasting their tortellini, which is served the Bolognese way – in a delicious clear broth.
