Gino cooked his dish after visiting a group of Benedictine monks in Tuscany, whose abbey echoes to the sound of beautiful Gregorian chant. Gino was taken on a tour of their vast vineyard and he managed to sample their local red wine. He was so impressed with the wine that it became a key ingredient in his beef skewer recipe.
