Gino D’Acampo serves up Northern Italian trio of meats with griddled courgette salad, garlic bread and chilli dressing which is his great grandmother’s recipe on This Morning.
The ingredients for the trio of meats with chilli and rosemary are: 4 tablespoons olive oil, 1 large onion, peeled and finely sliced, 2 tablespoons fresh rosemary leaves, ½ teaspoon dried chilli flakes, 350g top side of beef, cut into 2cm chunks, 8 large pork ribs, cut in half, 4 Italian style pork sausages, 2 tablespoons of tomato puree, 3x400g tinned chopped tomatoes, 10 basil leaves, Salt to taste, 8 slices ciabatta bread and 2 garlic cloves, peeled.
For the griddled courgette salad : 6 courgettes, washed and thinly sliced lengthways, Olive oil for brushing, 50g shelled pistachio nuts, lightly crushed, 25g basil leaves, roughly chopped, 150g Parmesan cheese, roughly chopped into little pieces, Salt and freshly ground black pepper to taste and Balsamic glaze.
For the dressing: 6 tablespoons extra virgin olive oil, Juice of 2 lemons, 1 teaspoon runny honey and 2 red chillies, deseeded and finely chopped.
