Brian Turner serves up veal fillet on pea mayonnaise with tomato and green pepper vinaigrette on A Taste Of Britain in Oxfordshire.
The dish is Brian’s celebration cook using local ingredients from Oxfordshire including veal from Cumber Farms.
Brian says: “A tasty combination of pea-flavoured mayonnaise and a rich vinaigrette to accompany veal steak with asparagus.”
The ingredients are: 1 tbsp oil, 85g butter, 4 veal fillet steaks, 12 stems asparagus, For the vinaigrette, 3 tbsp chicken stock, 4 tbsp dry white wine, 6 tomatoes, deseeded and finely diced, 1 tbsp green peppercorns in brine, drained, 1 tbsp fresh parsley, chopped, 4 tbsp groundnut oil and 1 tbsp white wine vinegar.
For the pea mayonnaise: 2 egg yolks, 1 tsp Dijon mustard, ½ lemon, juice only, 140ml rapeseed oil, 140ml groundnut oil, 55g purée of cooked peas and sea salt and freshly ground black pepper.
