Stevie Parle and Emma Grazette makes Turkish lamb and vegetable pizza on their visit to Turkey on The Spice Trip cumin trail.
Stevie and Emma got inspiration for their pizza from the lahmacuns, a street food that is very popular in Turkey.
The ingredients for their pizza dough are: 350ml lukewarm water (around 37°C), 1 tbsp dried yeast, Pinch of sugar, 2 tbsp olive oil, 500g (1¼lb) strong white bread flour (or 00 pasta flour), plus extra for dusting and ½ tsp salt.
Steve opted to make a lamb pizza with: 300g lamb mince, 1 red onion, chopped, 1 plum tomato, chopped, 1 fresh green chilli, chopped, 2 garlic cloves, chopped, 2 tsp cumin seeds, 1 tsp ground coriander, Pinch of Turkish chilli flakes, or 1 fresh red chilli, finely chopped (optional), 1 tsp chopped sumac (optional), Squeeze of lemon juice, Large handful of parsley leaves, Large handful of mint leaves and Salt, to taste.
Emma’s veggie pizza topping: 1 red pepper, 1 green pepper, clove of garlic, 1 onion, chilli, 1 tbsp cumin, pinch of salt and pepper, olive oil, squeeze of lemon juice, handful of parsley leaves and handful of mint leaves.
