Brett Sutton served up a belly of Bridgehampton lamb with croquettes, summer vegetables and black garlic dish at the White Post pub in Somerset that impressed Brian Turner and Janet Street-Porter on a Taste Of Britain.
The White Post is run by Brian as a family business and the they served in the pub are sourced from local suppliers.
The black Garlic in Brett’s recipe starts life as premium quality white garlic but, after gentle heating and a little time, its cloves become sweet, dark and jellied. The end result is a sweet taste, with hints of balsamic and undertones of regular garlic, that make it the perfect addition to a wide variety of recipes including lamb dishes.
