Brian Turner makes his celebratory recipe of Madeleine sponge biscuits with pears poached in honey and butter dessert on A Taste Of Britain to celebrate his food journey with Janet Street-Porter in Monmouthshire.
Their historic tour of Monmouth culminates at Upper Meend Farm where Janet and Brian do a bit of beekeeping before Brian cooks up this week’s celebration cook, with honey being the key ingredient.
With Monmouthshire being the food capital of Wales with bustling market towns, award winning vineyards, Michelin starred restaurants and the renowned Abergavenny Food Festival; Brian’s Madeleine biscuits with honey poached pears could be considered a great tribute to the region.
The ingredients for the Madeleine are: 85g unsalted butter, plus 1 tbsp melted butter for brushing, 2 tbsp honey, 2 large free-range eggs, 55g caster sugar, 2 tsp soft brown sugar, 1 vanilla pod, seeds only, pinch salt, 85g plain white flour, plus extra for dusting and ½ tsp baking powder.
For the pears: 55g butter, 2 pears, peeled and cut into small dice, 2 tbsp honey, 150ml sweet white wine.
