Brian Turner recipe for gooseberry and ginger biscuit fool on A Taste Of Britain went down a treat with Janet Street-Porter.
Brian sourced the gooseberry from Highfield Farm in Orford, Suffolk, and it was the visit to the far that inspired his tasty looking dessert.
Gooseberries have been a popular British fruit since as far back as Elizabethan times. Early in the season they are bright green, with a veined effect on the skin, and quite hard and tart so they are best for cooking with. Later on in the season, softer, sweeter varieties become available, often yellow or red coloured and are good to be eaten with out the need for cooking.
