Thermidor, which comes from the Greek word thermos, meaning heat, was the second month of the summer quarter, starting July 19 or 20 and ending August 17 or 18 during the 12 years the calendar was used by the French government from 1793 to 1805.
A thermidor dish is normally made with lobster but Brian puts his own twist on the dish using oysters.
