Si and Dave makes a tasty Bakewell tart for a teatime treat in the Original Bakewell Pudding Shop in Derbyshire. The duo says:
“This true British classic, Bakewell tart is best served slightly warm with a dollop of lightly whipped cream.”
The ingredients for the pastry: 425g plain flour, plus extra for dusting, 1 free-range egg, beaten, 2 free-range egg yolks, 250g unsalted butter, 100g caster sugar and ½ tsp salt and 50g ground almonds.
For the filling: 400g ground almonds, 175g caster sugar, 8 free-range eggs, beaten, ½ tsp almond essence, 3 tbsp raspberry jam and 50g flaked almonds.
