Simon Rimmer raspberry and coconut loaf recipe on Sunday Brunch

Simon Rimmer served up a delicious raspberry and coconut loaf on Sunday Brunch.

The ingredients are: 200g of butter, 200g of light brown sugar, 200g of self-raising flour, 4 eggs, 75g of desiccated coconut, 1 teaspoon of vanilla, 75g of fresh raspberries, 100g of raspberry jam, 150g of icing sugar, Approximately 30ml water, Half a teaspoon of pink food colouring and Desiccated coconut to decorate.
