Papa Ji’s (aka Gulu Anand) served up a tasty masala chicken with chapatis on Jamie’s Feast For A Fiver.
The ingredients are: 800g chicken thighs (skin-on, bone in), 1 large onion (or 2 small), finely chopped, 2 garlic cloves, minced, 2.5cm piece fresh ginger, minced (or 1 frozen cube of ginger–garlic paste), 4 tablespoons vegetable oil, 2 green chillies, finely chopped (optional, seeds retained), 1 × 400g tin of chopped tomatoes, blended (or use passata), 1 teaspoon ground turmeric, 1 teaspoon red chilli powder, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 30g butter, 100ml water, optional: 1 teaspoon dried fenugreek leaves, crushed, 1 teaspoon garam masala, 1 small bunch of fresh coriander, chopped and sea salt.
For the chapatis (makes 8 small): 200g chapatti flour (atta), Approx 1 tsp oil, pinch of salt and water, as needed.
optional: 1 tablespoon butter.
