John Torode and Lisa Faulkner Christmas spiced apple and ginger cheesecake recipe on John and Lisa’s Weekend Kitchen

John Torode and Lisa Faulkner served up a delicious Christmas spiced apple and ginger cheesecake on John and Lisa’s Weekend Kitchen.

The ingredients for the base are: 100g butter, melted , 1 tbsp stem ginger syrup , 100g stem ginger in syrup, chopped, 1 tsp cinnamon , 1 tsp ginger powder and 150g gingerbread or leftover biscuits.

For The filling: 600g cream cheese, 300g ricotta cheese, well drained, 150ml double cream , 120g caster sugar and Zest of 1 lemon.

For The Spiced Apple Caramel: 2 granny smith apples, 200g caster sugar, 100ml Brandy , 1 tsp ground ginger , 1 tsp ground cinnamon , 1 tsp mixed spiced and Popping candy to decorate.
