Mary Berry served up a tasty king prawn and tomato curry with baby leaf spinach, lime leaves and lemongrass on Mary at 90: A lifetime in Cooking.
The ingredients are: 900g ripe tomatoes, 2 tbsp sunflower oil, 3 large banana shallots, finely chopped, 1 large piece fresh root ginger, peeled and grated, 2 garlic cloves, finely grated, 2–3 tbsp Thai red curry paste, 1 tbsp tomato puree, 2 fresh lime leaves, 1 lemongrass stem, bashed, pinch caster sugar, 1 tsp fish sauce, ½ lime, juice only, 650g peeled raw king prawns, 150g baby spinach leaves, salt and freshly ground black pepper.
