Shivi Ramoutar served up tasty spiced Creole pork with smoked chilli sweet potato and molasses chickpeas on James Martin’s Saturday Morning.
The ingredients for the creole spice mix: 1 tbsp cumin seeds, 1 tsp fennel seeds, ¼ tbsp black peppercorns, 1 ½ tbsp sea salt, 2 tsp oregano, ½ tbsp cayenne pepper, ½ tsbp paprika, 1 ½ tsp onion powder, 1 ½ tsp garlic powder and ¼ tsp turmeric.
For the pork: 1kg boneless pork belly, unscored, 2 heaped tbsp creole seasoning, 1 carrot, halved, 1 onion, quartered and 2 cloves garlic, smashed.
For the smoked chilli sweet potato puree: 2 large sweet potatoes, 2 large knobs of butter, 1 heaped tbsp chipotle paste, to taste, For the molasses chickpeas, Drizzle olive oil, 1 heaped tbsp Creole seasoning, 200g tomato passata and 1 ½ tsp molasses.
To garnish: Micro coriander, Amaranth and any in season edible flowers.
