James Martin BBQ chicken skewers with salad and homemade raita recipe on James Martin’s saturday Morning

James Martin served up tasty BBQ chicken skewers with salad and homemade raita on James Martin’s saturday Morning.

The ingredients for the chicken are: 800g chicken breasts, sliced, 1 jar peanut and sesame chutney and 50ml vegetable oil.

Pickle for the salad: 100ml white wine vinegar, 50g caster sugar, Splash of water, 2 tsp black mustard seeds, 2 tsp chilli powder, 1 tsp salt, Juice and zest of 1 lime.

For the slaw: 2 carrots, sliced, ½ white cabbage, sliced, ½ mouli, sliced, 1 red onion, peeled and sliced, A few sprigs of mint, chopped, A few sprigs of coriander, chopped and 2 tbsp tandoori onion chutney.

For cucumber raita: ½ cucumber, diced, 200g thick Greek yoghurt and 4 tbsp mint sauce.
