Simon Rimmer served up tasty patatas bravas with chicken and manchego cheese on Sunday Brunch.
The ingredients are: 1kg of potatoes – bite sized cubes, 100ml of olive oil, 2 cloves of crushed garlic, 2 red chillies, 1 tin of chopped tomatoes, 1 tablespoon of smoked paprika, Salt & pepper, 200g of chopped chorizo, 4 x chicken breasts – cut almost in half and laid flat, Juice of 1 lemon, 175g grated Manchego, 50g of finely grated Parmesan, 1 egg and 1 tablespoon of Dijon mustard.
To serve: 20g of chopped parsley.
