Simon Rimmer served up a delicious tarta de santiago with creme fraiche and lemon curd on Sunday Brunch.
The ingredients are: 250g of fine ground almonds, 250g of sugar, 4 eggs, Zest of 1 orange and 1 lemon, 1 heaped teaspoon of ground cinnamon and 1 teaspoon of vanilla.
Serve dusted with icing sugar and creme fraiche and lemon curd.
