Gino D’Acampo makes his Italian family Gnocchi potato dumplings with courgettes recipe on Let’s Do Lunch with Melanie Sykes.
Gino serves his Gnocchi with courgettes in butter and sage sauce.
The ingredients are: 300g floury potatoes (unpeeled), 2 medium size courgettes, cut into 1cm cubes, 1 small egg (lightly beaten), 100g salted butter, 100g plain flour, plus extra for dusting, 1 tablespoon of finely sliced fresh sage, 30g freshly grated Parmesan cheese and Salt & pepper to taste.
